Since 1993, La Sommelière has stood out in the market by offering wine cellars that can replicate the storage environment of a natural cellar. The brand quickly made a place on the market by offering wine cellars able to reproduce the conservation environment of a natural cellar. Léa Perret won the title Best Young Caviste de France in 2022 and she is co-manager of the cellar Nicolas lyon Jacobins. The 5 golden rules for a wine cellar

The wines require appropriate conservation to allow them to ripen and develop properly in flavor and texture. Wine lovers often seek to create a aging cellar to store their precious bottles. La Sommelière a very early defined 5 golden rules for a wine cellar : precise and constant temperature, controlled hygrometry, absence of vibrations, filtration and aeration system and protection against light. Commitment to La Sommelière in the optimization of products, according to the constraints and activities of the customers, has enabled it to acquire recognized expertise in its field.

Accurate and constant temperature

Wine is temperature sensitive and should not be exposed to excessive heat fluctuations. Too high temperature accelerates the aging process, while too low temperature slows down the process. The ideal temperature to make wine aged is 12°C. Temperature fluctuations must be avoided as much as possible so some models offer visual and sound alarms or a winter function to ensure optimal operation.

A controlled hygrometry

A relative humidity of 50% to 80% is ideal for the storage of fine wines. Too high humidity can lead to mould formation and too low humidity can cause a drying of the cap, resulting in oxidation of the wine.

The absence of vibration

Vibration can negatively affect the quality and flavour of wine by disturbing the formation of deposits, essential in the aging of red wine. It is therefore essential to avoid vibration sources in your wine cellar. Choosing a cellar with an anti-vibration system, guarantees you the good maturation of the wines. Our cellars are equipped with Silent Block technology; shock absorbers that absorb vibration while providing quiet operation.

A filtration and aeration system

A good ventilation is essential to avoid mould and bad smells in your wine cellar. It is recommended to install a ventilation system to allow air to circulate and evacuate excess moisture. An active charcoal filter can be used to eliminate unwanted odours.

Protection against light

Light is an enemy for wine, because it can alter its aromas and flavors and especially accelerate its aging. Bottles must be stored in the most total darkness, without direct exposure to sunlight. Full door or glass door with UV treatment, many alternatives exist to allow you to protect and admire your bottles. Do not forget the interior lighting system that needs to be adapted to avoid impacting the aging of wine, we will preferably choose it LED.

This allows you to remotely manage a wine book and to follow in real time all the bottle entries and outputs of the cellar.
